not a bad day fishing today, the sail fish were found to the Nort & South, as well as slighly to  the east,140 to 160 feet & west.That tells you they are scattered. The same goes for the dolfin.here is our catch for today: 3-sharks,6-bonitas,many more if  you want to bend a rod.also 3 dolfin about 15 pounder and (1)sailfish.this was a 1/2day trip. may fish week-end.

here we go: We finally had a letup of the wind and yesterday we decided to try a little SPANISH MACKEREL fishing. The seas were calm and the Mackerel were everywhere .It did not take more than an hour to catch our limit,which was 10 per person and we had 3 anglers.This was all everone wanted to catch,, so back to port for us. All had a good time and will return again.The next few trips will be looking for dolfin and Sailfish.

Spanish Mackerel they are fun for all ages to catch! This time of year they are plentiful in the Stuart, Florida area waters. This is a delicious fish and one can find many receipts. These fish can be prepared by broiling, frying, baking, or rarely by smoking.

Down-Eastern Style Grilled Spanish Mackerel

Yield: 6 servings

• 1/4 cup olive oil
• 3 lemons, sliced
• 6 large Spanish Mackerel fillets
• Salt and ground pepper

1. Light grill and set it to medium heat, cover the surface of the grill with aluminum foil.

2. Rub both sides of the fillets with olive oil and place them skin side down onto the aluminum foil.

3. Sprinkle the fillets with salt and pepper, cover each completely with the lemon slices.

4. Grill until meat just begins to flake, do not flip fillets.

5. Serve immediately.

Spanish Mackerel with White Wine Sauce

Yield: 4 servings

• 2 cups white wine
• 3 TBSP wine vinegar
• 3 TBSP olive oil
• 2 onions, cut into thin slices
• 1 carrot, thinly sliced
• 1 clove garlic, minced
• 3/4 tsp dried thyme
• 1/2 tsp coriander seeds
• 8 peppercorns
• 8 parsley sprigs
• 2 bay leaves
• 1 1/2 tsp salt
• 2 pounds Spanish Mackerel fillets
• 1/4 tsp ground black pepper

1. In a medium stainless-steel saucepan, combine the wine, vinegar, oil, onions, carrot, garlic, thyme, coriander, peppercorns, parsley, bay leaves, and salt. Cover and bring to a boil. Reduce the heat to moderately low and cook for 10 minutes.

2. Oil a heavy flameproof 9-by-13-inch stainless-steel or enamel pan. Put the fish, skin-side down, in the pan in an even layer. Pour the hot wine broth on the fish, spread the vegetables over the fillets in an even layer, and sprinkle with the ground pepper. Cover with aluminum foil and bring to a simmer over moderately high heat.

3. Reduce the heat and cook at a gentle simmer until the fish is just done, about 10 minutes for 1/2-inch-thick fillets. Remove the parsley and bay leaves. Serve in shallow bowls.

For these receipts to work well, fresh caught mackerel is the way to go especially aboard the  ” Infinity “

Today…Southwest winds 10 knots. Seas 3 to 5 feet with a dominant period 10 seconds. A light chop on the intracoastal waters.

Tonight…West winds 10 to 15 knots becoming north 15 to 20 knots after midnight. Seas 4 to 6 feet with a dominant period 10 seconds. Choppy on the intracoastal waters. Slight chance of showers in the evening…then chance of showers after midnight.

Thursday…Northeast winds 15 to 20 knots. Seas 6 to 8 feet with a dominant period 6 seconds. Choppy on the intracoastal waters.

Thursday Night…Northeast winds 15 to 20 knots. Seas 6 to 9 feet. Choppy on the intracoastal waters.

Friday…Northeast winds 15 to 20 knots. Seas 6 to 9 feet. Choppy on the intracoastal waters.

Well I gave my trip report yesterday and said we were going to fish tomorrow. Well the weather took a turn for the worst!  And you know it, no fishing, although a few boat’s tried to fish but had to return to port and that ended all fishing for the week-end .

Today’s fishing charter is about two fishermen that just would not take the captains word .I told them that do to high north east winds and high surf ,to save their money for another day but they said they still wanted to try it.

I said if we go through the Port St Lucie Inlet and found that they could not handle it, they would pay for the trip in full. OK they said. Well, you guessed it back through the 6 to 7  foot seas we went.

When it comes to pay time ,I don’t  like taking money for an incomplete job, so they paid the mate and fuel, but I didn’t have the heart to take full payment. I told them next time it will be full payment.  It is a lot of work to wash the salt away and put rods and reels plus rigged bait. However, theses two fishermen did not have the opportunity to catch fish using our Penn Rods & Reels.

Please… caution! Fisherman listen to your captains , it may save you money, for some charter captains they will charge for the entire trip once they leave the dock.However this is not my policy.
